The petitioner seeks a variance from section 3-502.11(c), 2013 FDA Food Code, which requires a food establishment to obtain a variance from the regulatory authority as specified in section 8-103.10 and under section 8-103.11 before using food additives or adding components as a method of food preservation or to render a food so that it is not time/temperature control of safety food.
